I think it's a classic metaphor for having something to hold on to when you don't know or care where the road is leading you.
It's a classic country/blues metaphor. A protector, guardian angel. Moses wandered the dersert for 40 years with nothing but God to rely on, so I guess a dashboard Jesus will be enough for Jons little cartrip

My parents would never have been caught dead with one in the car, but I remember seeing them in other cars. So maybe the PDJ has something to do with a trip back to a simpler time of life, and a more care-free existence. No matter how old you are, things typically seem like they were "simpler" twenty or twenty-five years ago. Now this is over-analysis.
