I think of Def Leppard playing "Always", "You give love" and maybe "Blood on blood"
Velvet Revolver, with Slash on "Homebound Train"
And U2 on "Something to believe in" and "These ain't a love song"

9 out of 10 times covers are boring, just because whoever doing 'em doesn't offer anything new to songs. So I'd like to hear someone bringing new views on familiar tunes. Jovi tried it themselves with TLFR and it turned to shite, so perhaps other direction.....Metallica / hook me up sure sounds interesting.

Megadeth / king of the mountain
Nightwish / Blood on blood
Angra could put some serious power into any ballad.....

..and so on.
