Keep in mind, a lot of it has to do with lighting and the soundboard guys as well...
they have this elaborate lighting going on with all the lasers and those wild wideo screens. having that all set perfectly takes time. changing up setlists day after day wouldn't be too convienent fo the guys behind the scenes working all those things. having a "stable" set means less chance of lighting or sound stuff, etc getting screwed up because the crew guys knows what's coming up and they've been working it in that order for a while. remember, they're not playing small venues/clubs where they can just do whatever they want and not worry about a huge soundboard and lighting!
However, I have seen bands that would just have 2 completely different setlists that they would alternate between show nights. That was cool because if you go to more than one show, you could see something completly different. and by limiting it to two different albeit "stable" sets, that would make it easier on the crew because of the daily structure...less chance of errors. so that's good for the fans, and good for the band and crew!
