I didn't think he was joking, but I don't think he was angry. He was just stating a fact. As he says, he wants everyone's attitude to be to go out thinking "it will be the best night you ever did or the last night you ever going to do it." Does *he* always live up to that? No, but I bet he beats himself up over it. Given the time, money and hassle involved on the part of the audience, that is the right attitude for the band to have. Bon Jovi is known to be hard working--they don't just stroll out on stage, pick up their instruments and start singing. What shocks me are the times that they don't apparently sound check before a concert. The audience has a right to complain if the sound is off or the mistakes start piling up.
