That means that the sound isn't recorded straight from the microphone/instruments, but the sound that can be heard in front of the stage by the audience is captured on the mixing desk. Similar to the way shows are captured for radio broadcasts.

Bob Clearmountain is a sound engineer, famous for his work on stuff like the Rolling Stones' "Shine A Light" live DVD. I think he also did a remix of I Believe or some other track in 1992/93.
