Exactly. The visa will be valid from the day you're going to enter the country, not the day you apply for it. I usually have to get African visas for my boss so if you have a particular question feel free to ask me.
One advice I'll give you is that the Tanzania one usually takes a week - if not more and they are close on Wednesdays so don't leave it until the last minute.
For Kenya, if I am not wrong, you can apply for a visa upon arrival but you'll spend a long time at the airport so it is definitely better to get it here.
