Not so. There are quite a few pubs/lounges/bars in Edmonton that serve food and drinks up until close. (2 am). Your experiences may have been unlike this, but not every bar is the same here, and out west things are possibly different. What is so serious about this situation? It's not like we're a third world, poverty stricken country because we can't get some nachos after 10 pm at the local pub. :P
Sorry, I meant to say you cannot buy food in pubs at any time of the night. At night time, pubs are for drinking in, not eating. The fact you can go into any bar and order food any time of the night is what makes it a bar, and not a pub.

No. Anyone can do what I am doing by just doing some research on the internet. A working visa for Canada can be easily obtained from several places. Getting a job in Japan is just as easy if you are fluent in English. Why people choose to stay in one country all of their life is beyond me.
