Ritchie Blackmore - Spotlight Kid / Highway Star
Page - Dazed and Confused, Since I've Been Loving you
Clapton - White Room, Crossroads
Knoppfler - Brothers in Arms, Sultans of Swing
Steve Vai - For the Love of God
Vai/Sheehan - Shy Boy with DLR - basically one big bass/guitar solo

I don't know about technical difficulty, but in terms of ones I think sound great:

Guns N' Roses - November Rain and Sweet Child O' Mine
Queen - Bohemian Rhapsody
Michael Jackson - Thriller (played by Eddie Van Halen)

...and of course, Dry County, lol.

there's no need to judge solos on technical difficulty anyway. many of the 'technical' solos are boring and unimaginative anyway.

i can't make a decision at the moment. i prefer live stuff to studio instrumentals but many that have already been mentioned are up there on my list.

There is so many to choose from. Here's a few that springs to mind:

Jimmy Page - Stairway To Heaven, When The Levee Breaks
Mark Knopfler - Sultans Of Swing, Tunnel Of Love (Alchemy, Live - extended solo)
Jimmy Hendrix - All Along The Watchtower, Purple Haze (Woodstock, live), Voodoo Child
Eddie Van Halen - Eruption (sounds amazing, but it's not just guitar)
Jeff Beck - Beck's Bolero
Ry Cooder - Slide Guitar Blues
