HERB RITTS, the great photographer who died far too young at 50, will be remembered Feb. 2 at Sotheby's. The American Foundation for AID Research and AIDS Community Research Initiative of America honor his memory. Stars from the worlds of art, fashion, movies and photography are expected. Dorothea and Jon Bon Jovi are two of the evening's chairs. And as a special treat, Jon will perform. Call 212-966-4710.
