Ummmm, I'd have to say that most of the time I like it. I couldn't imagine a song like November Rain without all the orchestrations. And I really liked the show Metallica did with the San Francisco Orchestra. Sometimes though, I think bands overdo it with the orchestras (Creed for example).

Depends...

Obvously harmonies in a riff are amazing, I can't help doing harmonies on just about everything I write at the moment, they're so darn effective and they rock!

Sometimes vocal harmonies work.... Iron Maiden's number of the beast. "I have the power, (with harmonies) I have the fource". It's the one bit of the song which really sounds weaker when performed live...

Orchestra is usually baddly done. Sometimes it can work, if it does actually have a classical baisis. Malmsteens guitar concerto works, Wakemans' Return to the Centre of the Earth works, Deep Purple concerto for group and orchestra works...

In fact, that's probably the best example I could think of. Anybody got the Deep Purple live at the Albert Hall? The concerto bits in that are increadible, and the early thigns on, from Jon Lords solo album Pictures within are pretty good. But when they're doing the real rock numbers, (smoke on the water, Pictures of Home, Ted the Mechanic e.t.c) it just doesn't sound right with an orchestra, some bits work, but most of it doesnt...

I never use 'Strings' in my playing, well very very rarely, Certainly never for more than a few seconds, or one verse or something.... I'd never base a whole song, or section on it
